Two Years...

I can't believe Eric and I have been married for two years already! How time flies... too bad he couldn't be here today to celebrate with me!

In all fairness, we celebrated over the weekend because he knew work would have him out of town on the actual day. So we took a day trip down to Louisville , KY. We started out early and hit a couple of salvage stores/antique shop, just because. We did find a couple of trim pieces for the house, actually. But those places are always fun to browse.

Next, breakfast. We found this little area of town near the shops we visited and asked Siri for recommendations. Well, the top place she recommended wasn't open yet, but there was a place right next door that was slammed! It was called Toast on Market, and after a quick peak at the menu, we decided to try it out. Wow! It was so awesome! I had these Lemon Souffle pancakes that were just amazing and Eric found the staff favorite, Toast and Eggs. Both dishes were beyond good! Ended up being a great find!

From here, we decided to go to Churchill Downs and watch some horse races. No betting - just for fun. It was just a nice day to go to the track. Besides, the Belmont Stakes were later that day, so we knew there'd be some good action to watch since they want to have a crowd on that day, 'just because', I guess. It was kind of nice to go there when it wasn't overcrowded, like it gets for the Derby in May. You could actually enjoy walking around a bit. Which we did, before grabbing a couple of drinks and a snack and finding a place to sit in the shade to watch a few races. !Last time I went to Derby I was in the infield... it's a much different perspective on the outside of the track

As the crowd grew bigger (as it got closer to the Belmont Stakes start time), we decided to take a drive down to Bardstown. Eric had gone many years ago and remembered a quaint little town that would be nice to walk around. Which it was... but there wasn't much else to it! So we found a local place and had a little food and a quick drink. At this point, we figured instead of wandering much more, we'd head back into Louisville for some dinner.

Siri made some recommendations, again, and this one place kept popping up as the top place on her list. It was called Seviche. Quite frankly, it sounded like our type of place, so since we were heading up Bardstown Road anyway, we figured it was worth a shot. Well, another 'wow factor' restaurant for us in Louisville! We created our own little tapas style meal, ordering a few plates, which we shared. Of course, seviche (ceviche) was in the mix. All of it - awesome! Great find by Siri, once again!

With that, we decided to head home. Just a nice relaxing day trip was what we wanted, and that's what we got. A very happy anniversary, indeed!

Well, most nutritionist will tell you you're actually supposed to have about 6 SMALL meals a day... ;)
